Moong Sprouts Salad

Breakfast is something I never miss to have… but some days, I don’t feel like cooking anything for lunch/dinner! Neither I feel like eating anything heavy! I’m sure that happens to you many times too ;) I go with my quick-fix for the day… A glass of fruit juice and something power-packed in bowl!

Last week, I had my most-loved aluminium bowl full of sprouted moong… So yes, had some protein on hand… Made this crunchy, colorful and delicious salad… I love using this mixture in crostinis too but more I prefer to eat on its own!!! Try it out…

INGREDIENTS:

1 cup Moong Sprouts
1/2 Tomato, diced
1/4 Onion, chopped or diced (optional)
2 tbsp Lemon Juice
A few Mint leaves, roughly chopped
1/2 tsp Chat Masala
Sprinkle of Red Chilly Powder
Salt, to taste

  1. Take all the ingredients in a bowl and toss well.
  2. Keep in fridge for 10-15 mins.
  3. Serve chilled!

You can use coriander leaves to replace mint! I love freshness of mint in this one…
