Roasted Veggie Salad with Buttermilk Dressing

Doing nothing, sitting on couch, eating high-cal food and watching your favorite tv shows/movies!!! Does it sound exciting to you? Recently, I have been hearing it a lot… and so thought to clarify a few things!

Working from home has its own pros… and cons at the same time! Well, it keeps you busy all the time, specially for those who can’t just feel like being a couch potato :P I too get buzy and I too find it boring at times… It gets monotonous many times… And it makes me fall into an amazing world of kids themes at times… But then there’s no point on crying over it everytime, right? Life is too short to run around and miss enjoying the moments!!! And I absolutely don’t want to miss living in between the chaos around <3

I start my day with quite a plateful of brekkie every morning… I cook fresh meals all the times… I make chai at least 2 times a day… I invite friends over lunch or dinner… I too go out for shopping… I’m no different from those who work full-time from their WORKPLACE!

Anyways, I love experimenting food… that is what all you foodies know by now! If I don’t make a full-meal, I at least cook something substantial to eat i.e. healthy salad bowl or soup or one pot meal or even pasta works… but frozen meals never work for me!!! When I go to veggie market, I make sure I get too many vegetables for oven-roasting! Potatoes, Broccoli, Beans, Carrots, Radishes… Aaaah!!! How I love this fresh produce

Let me say… I have used McKenzie’s Pink Salt & Chilli Blend here for seasoning… and it was super-awesome! 5/5 for that… :)

INGREDIENTS:

Veggies of your choice (I used potatoes, carrot, broccoli, Radishes)
Olive Oil (Spray for a healthier version)
Mc Kenzie’s Pink Salt & Chilli Blend (or seasoning of your choice)

Dressing–

Buttermilk
Lemon Juice
Fresh herbs (I used parsley)
Salt

STEPS TO FOLLOW:

  1. Wash and cut the veggies into dices.
  2. Coat them well with olive oil drizzles or spray.
  3. Sprinkle seasoning and toss everything well.
  4. Spread it onto lined baking tray and bake for 30 mins or until tender n crisp outside.
  5. Mix all ingredients of dressing together and drizzle over a salad bowl.
  6. Serve hot!!!
