Roasted Radishes

When it’s about just the two of us, every night is a “Date Night”! Well, I’m not a kind of person who would prefer to have expensive gifts, dinner at some lavish restaurants, lots of “unthoughtful” shopping n all… My life is much more simpler than that! And it’s not that I love cooking so I cook every single day! I also enjoy takeaways at times, specially after a long tiring weekend! Good thing for me is… Hubby enjoys cooking so he steps into the kitchen to make a quick dinner for us… or I get a delicious unasked takeaway <3 At the end, It’s all about “HAPPY US” :) I absolutely enjoy the way we live.. And at the same time, I feel happy to be friends with those who doesn’t follow the same lifestyle as me! Opposite attracts always…

All what I always want is… spending hours chit-chating with hubby or listening to music, friends around and lots of food! Happiness at its best! As far as I get these things, I’m a happy person!

Yesterday was one of those lazy evenings when I wanted to play some good songs on high volume and didn’t want to cook much… Had to clean the chaos in kitchen, clean the oven before sleeping, had to go grocerry, phone calls at home and much more things was on pending list. But then I wanted to experiment too ;) Took out some radishes and tried oven-roasting them… Loveddddd it much more than Rajma-Rice and Paratha I cooked along :P

INGREDIENTS:

10 Radishes
2-3 tsp Olive Oil (or oil spray)
Salt, to taste
Warm Lemon-Coriander Sauce

STEPS TO FOLLOW:

  1. Wash and trim the radishes.
  2. Cut them into 2 or 4 pieces and arrange them on baking tray.
  3. Drizzle olive oil on top and sprinkle some salt.
  4. Bake in oven for 15-20 mins on 200 degrees.
  5. Heat 1 tsp olive oil, 2 tsp Lemon Juice and chopped coriander in a small pan.
  6. Drizzle this warm sauce over the radishes.
  7. Serve it immediately :)

SJ’s NOTE:

I served it along with some cooked kidney beans, salad greens, onion juliennes (soaked in lemon juice)!!!
