Lemon-Coriander Hummus

Lemon & Coriander? I’m in love with these flavors… I don’t know if it’s same with you but lemon definitely add an extra zing to my dishes :) Recently while visiting my fellow-bloggers work, I came across something that made me soak chickpeas immediately! I couldn’t wait till I finish reading that particular post :P

Yes, Anitha had posted ‘Lemon & Coriander Hummus‘ on her space… What else can be fresher than this??? And believe me, that’s one of the best dip/spread I had. I bottled up a small jar but before I close the lid and put it in refrigerator, we gobbled up half of it there n then with herb crackers :P Ultimately, I had to make another batch the next day… Thanks a ton, Anitha for sharing such a wonderful recipe :)

Recipe Source: Anitha’s Lemon-Coriander Hummus

INGREDIENTS:

1 cup Chickpeas (canned or pressure-cooked)
1 cup Coriander, chopped
2-3 Garlic cloves
2 tsp Tahini
1/2 tsp Cumin Powder
2 tbsp Lemon Juice
3 tbsp EVOO
Salt, to taste

STEPS TO FOLLOW:

  1. Take all the ingredients in a jar.
  2. Grind it to make it smooth dip/spread.
  3. Sprinkle a bit more of cumin powder on top before serving!
