Paneer-Mushroom Bhurji

Can you go on a strict crash diet ever??!!! I can’t… I’m more of a healthy eater… It’s not that I avoid junk completely… I do eat it all – burgers, sandwiches, fried munchies n what not! But it’s just once-in-a-while scene n I cut off the calories from the next meal. Quite like… If I eat a burger today or enjoy samosas, I would prefer a salad or soup bowl for the next day! Isn’t it an act of balancing only? No matter if I remain a bit overweight, I won’t really stop eating the things :) And that may not sound right to you but that’s how it is, in my case!

I have seen people who observe a strict diet and in that too, they look for the substitute ingredients! Some things are better eaten in normal form only, is what I believe in. And to be honest, I’m a home-cook… My cooking doesn’t have to produce a gourmet dish with hi-fi ingredients. I rather prefer to cook something with all that I have in my pantry and used on day-to-day basis :) I know, I’m on the opposite side of most cooking-experts but that’s what a home cook do, right? Ohh yes, in case if you’re the one who take cooking and blogging as a business or profession, you definitely have to run in that race… But that doesn’t work for me! What’s your opinion on this???

Well sometimes… I don’t even think of creating something new with my favorite ingredients at times i.e. If I see mushrooms, I hardly can think of anything beyond super-brekkie! If I have got it in bulk then here is the result of what I did…

INGREDIENTS:

6 Button Mushrooms, diced
150 gms Paneer, grated
1/2 Onion, finely chopped
1 tsp Ginger-Garlic Paste
2-3 tbsp Diced Capsicum
1/2 cup Tomato Puree
1 tbsp Lemon Juice
1 tsp Red Chilly Powder
1/2 tsp Turmeric Powder
2 tsp Coriander Powder
1/2 tsp Garam Masala
Salt, to taste
2 tbsp Oil
Coriander Leaves, chopped

STEPS TO FOLLOW:

  1. Heat oil in a kadai and add cumin seeds.
  2. Once it crackles well, add onions and ginger-garlic paste into it.
  3. Let it get cooked until onions are soft and then add capsicums and tomato puree along with all the spices.
  4. Mix well and then add diced mushrooms in it.
  5. Cook it for a 2-3 mins until it releases some water.
  6. Add grated paneer in it and lemon juice too.
  7. Mix everything gently and cook for a min or 2.
  8. Serve hot with phulka roti or paratha!
