Butter-Orange Biscuits {Eggless}

Did I post any recipe of my baking experiments before? Naah… I don’t think so! And I was just wondering why I still haven’t posted the one for these gorgeous cookies :P Now why I tried ‘Orange-Butter Cookies’??!!!
Hubby keeps on getting a bag of oranges/mandarins every now and then. And not just 4-5, it contains nearly 15-16 oranges for two of us :P Can you believe that? It’s really hard to use them up in different ways… I make juice with a healthy touch, I add this flavor to my cakes/cupcakes, I often eat them as it is… And that made me think about cookies too. Here you go with my recipe, which I tried a few months back… Well, I have a bunch of oranges in stock at this moment too so off to bake some today!!!

orange-butter cookies

INGREDIENTS:

3-4 tbsp Unsalted Butter, at room temp
1/2 cup Caster Sugar
1.5 cups Plain Flour
1 tsp Baking Powder
2 tsp Orange Zest
4 tbsp Orange Juice
1/2 tsp Salt

STEPS TO FOLLOW:

  1. Sift the flour and baking powder in a big bowl. Add salt, caster sugar and orange zest into it and mix everything well.
  2. Add in butter into it and mix well to form crumbly texture.
  3. Knead a soft dough with orange juice and add water as required.
  4. Divide the dough in 20 equal balls and flatten them a little on top using fork.
  5. Bake in pre-heated oven for around 12-15 mins or until edges start getting golden in color. Make sure you don’t overbake else cookies will get hard in texture.
  6. Serve warm or store in air-tight container once they are cooled down to room temp.

SJ’s NOTE:

  • Make smaller balls out of dough as baking powder will make them rise a bit and butter will flatten them a little.
  • Other flavors you can try: Lemon, Nuts, Coconut etc.
