Soya Kofta

‘Kofta’ – Any North-Indian curry with these deep-fried dumplings is the most favorite dish of my family… Probably the most ordered one too when we eat out :) I remember one of the summer vacations during primary schooling, I went to stay at my masi’s place! They used to take us out for dinner at that specific ‘Swati’ restaurant n order their special dishes! That’s when I tasted ‘Malai Kofta Curry’ for the 1st time n since then, I have been a fan of Koftas :)

Wait a min… I said, Koftas! Yes, I’m not pretty much like making kofta curry everytime… I do make these dumplings/koftas/fritters to have with a cuppa tea! Also as a signal for ‘Meal is ready’ i.e. appetizer :P

But everytime having them deep-fried doesn’t work well! I found an alternate to make healthy koftas since I got my paniyaram pan :) Now I often try different ingredients n flavors too… But one ingredient that I consistently love adding (at least a small one) is potato, without which I always see my koftas crying!!! This time, to bring protein-rich variety of it, I have used soya granules…

What made me use soya??!!! Well, wanted to make ‘Achari Palak’ inspired by Atma ji of IFF, but I was a bit hesistant for using soya nuggets in that gravy… Knowing hubby’s taste buds, I was sure to have a rejection :P So made soya kofta with soya granules n mashed potato n believe me, it was a super-hit dish :)

Why don’t you try making these ‘Soya Kofta’??!!!

INGREDIENTS:

1 cup Soya Granules
1 Boiled Potato
1/2 tsp Green Chillies, finely chopped
1/4 tsp Ginger, finely chopped
1 tbsp Breadcrumbs
A pinch of Turmeric Powder
Salt, to taste
Oil, as required

STEPS TO FOLLOW:

  1. Soak soya granules in warm milk for 15 mins and squeeze milk up to 90%.
  2. Mash boiled potato in a bowl and add squeezed soya granules in it.
  3. Add rest of all ingredients and mix everything well.
  4. Divide this mixture in 7-8 portions and make lemon-sized balls out of them.
  5. Heat paniyaram pan with few drops of oil in each mould.
  6. Place these balls in it and let them get roasted for 1-2 mins each side.
  7. They are ready to serve!

SJ’s NOTE:

  • You can also soak soya granules in warm water. It’s my personal choice to use milk.
